Chocolate Chip Pie w/Pecans

This recipe was a through back to the cookie cake why not make a chocolate chip cookie pie. This is a new recipe I’m trying, not my regular chocolate chip cookie recipe. It turned out nicely...lol although I think I will use my recipe next time.









chocolate ganache drizzle


1 ½ c unbleached flour
½ t salt
½ t baking soda
½ t baking powder
1 sticks butter, softened
¾ c packed light brown sugar
¼ c sugar
2  lg eggs
½ T vanilla
1 ½ c semisweet choc chips
1 c pecans




 Preheat 350 butter - 1 (9 inch) pie plate set aside


In large bowl sift together flour, salt, baking soda, & powder. In mixer cream together butter, brown sugar & sugar. Add eggs 1 at a time, beating well, add vanilla, then add flour mixture mix until fully combined. Add choc chips & nut place dough in pie plates and smooth the tops with hand or spatula.


Bake about 30 -40 mins or until pie is golden and slightly firm to the touch but still soft. If pies begin to darken too much before they are baked through, cover w/foil and continue baking. Let pie cool then drizzle with chocolate ganache

Chocolate ganache
¼ c. chocolate chips
1/8 c heavy cream
1 T corn syrup
melt altogether in microwave stir and drizzle...



Tips

1. I added dark chocolate chips and semi sweet.
2. Chocolate ganache drizzle
3. You can use whipped topping homemade or store bought
4. A scoop of vanilla will go well…

Double Chocolate Muffins

I wanted to make something easy that you can eat on the go, take to work, school or like my daughter she eats them on the train. lol


It's a simple muffin recipe that you can tweak and make your own. For instance you can remove the cocoa powder and it's not double chocolate anymore it's just a chocolate chip muffin...!








I sprinkled powdered sugar



1 1/2 cup unbleached flour
1/2 cup unsweetened cocoa
1 Tbsp. baking powder
1/4 t. salt
1/2 cup firmly packed light brown sugar
2 large eggs
1 cup milk
6 Tbsp melted butter cooled
1 cup semi sweet chips


Preheat oven 375 grease muffin pans with butter or spray if not using paper cupcake pans.


1. Sift together flour, cocoa, baking powder and salt into bowl, add sugar and stir.
2. Lightly beat eggs add to melted butter and milk mix well, make a well in the center of the dry ingredients and pour in the wet ingredients.
3. Stir gently until just combined, do not over mix.
4. Gently add chocolate chips
5. Spoon batter into muffin pan.


Bake for 15-18 minutes or until firm to the touch


 

Tips
1. I added 1/2 each dark chocolate chips and semi sweet.
2. I sprinkled powdered sugar (optional)
2. I always use unbleached all purpose flour....use what you have

Tye Dye St. Pattys Day Cookies

I decided to make something for the kids on St. Patrick’s Day an easy recipe for them to take to a school party or a family gathering.



It's a simple sugar cookie recipe and I used green food coloring, I mixed it in each individual cookie to give it a tye dye look.











 
 
2 sticks butter softened
1 1/8 c sugar
1 lg egg
1 ½ t vanilla
2 ¼ c unbleached flour
1 t baking soda
1 t cream of tartar
½ t salt




Bake 375    9-11 mins.


Cream together butter and sugar, beat in egg and vanilla. Combine flour, baking soda, cream of tartar, salt, add to wet ingredients. Mix well chill for at least 2 hours.




Tips
1. green frosting can be used.
2. green sugar can be sprinkled

Pecan Pie

I decided to make one of my favorite desserts pecan pie, you can’t beat a warm slice of pecan pie with a large scoop of vanilla ice cream….lol This recipe is very easy there is NO way to mess it up.

Actually this is my older daughters genre, she's the pie lady she makes a wicked apple pie as well. yummy, I will be baking it later on this year.





WOW this was delicious!!!!




Pecan Pie


1 cup Karo light corn syrup

3 eggs

1 cup sugar

2 Tbsp butter, melted

1 t. vanilla extract

1 ½ cups pecan

1 unbaked 9” deep dish pie crust

or

1 pillsbury pie crust unfold and place in pie dish


Preheat oven 350
In a bowl combine Karo, eggs, sugar, butter and vanilla mix well, add pecans pour into pie dish. bake 60-70 mins.





Tips
1. I use about 2 cups of pecans, I love pecans.
2. I like to use pillsbury pie crust, I spread a little butter in the pie dish before I place the crust into the dish. for that extra buttery taste.

Chocolate Brownie Cookies

This is my 4th and final week of all CHOCOLATE...I baked 4 recipes featuring chocolate for the month of February for "Valentines Month" lol....


week 1- Mississippi Mud Pie
week 2- Molten Lava Cake
week 3- Memphis Mud Pie
and last but not least
week 4- Chocolate Brownie Cookies


This recipes I wasn't too happy with I needed to tweak it more, the cookies are very thin and they stuck to the parchment paper. I think I will add more flour the next time I bake these cookies to help them rise more and hopefully not stick. However the taste was very good, and of course I added pecans... lol

Ingredients

¼ c unbleached flour
¼ t baking powder
1/8 t salt
2 lg eggs
2/3 c sugar
1 t vanilla
½ t instant espresso powder dissolved in 1 ½ t water
4 oz dark choc.
4 oz semisweet choc.
2 T butter
**¾ c semisweet choc.** (optional)
Confectioners sugar (optional)

375 8-9 min.
Combine flour, baking powder and salt in bowl. Beat eggs, sugar, vanilla and dissolved espresso in a large bowl until thick & tripled in volume, 5 min.


Combine chocolates and butter in microwave safe bowl, heat until choc mixture melts, stir until smooth (cool). Gently fold choc mixture into egg mixture w/rubber spatula until partially combined (there will be some streaks it’s ok). Gently fold in flour mixture just until combined add chips (optional). Let batter stand 15 – 20 min. until slightly thickened. Bake until tops are puffed and cracked. Dust tops with conf. sugar (optional)




Tips:
1. The recipe asked for espresso, I didn't have any I used regular brewed coffee (cooled).
2. I didn't add the extra chocolate chips, I thought 8oz was more than enough.

Memphis Mud Pie

Ok. This is what happen, I was watching the Neelys on the food network and they made a Memphis Mud Pie, yea that’s what I said lol never heard of it. It looked sooooo delicious I had to try it. I know I made a Mississippi mud pie on February 6, 2011, I just had to try it…lol



Since I love chocolate and pecans, why not…lol I think you will like it too.


I had extra filling left over, I baked it in a ramekin without a cookie crust and I liked it more...Just a thought.

Gina's Memphis Mud Pie

• 4 ounces bittersweet chocolate, coarsely chopped

• 4 ounces semisweet chocolate, coarsely chopped, plus shaved chocolate, for garnish

• 1/2 cup unsalted butter

• 4 large eggs

• 1 cup granulated sugar

• 1/4 cup light corn syrup

• 1/2 teaspoon salt

• 1 cup chopped pecans, plus finely chopped pecans, for garnish

• 1 deep-dish, store-bought, chocolate cookie wafer crust

• 1 cup heavy cream

• 1/4 cup confectioners' sugar

• 1/4 teaspoon vanilla extract


Directions
Preheat oven to 350 degrees F.
Melt the chocolate and the butter in a double boiler or microwave safe bowl. Stir continuously until combined and smooth.


Using a stand mixer, beat the eggs, sugar, corn syrup and salt on medium-high speed until it lightens and doubles in volume, about 2 to 3 minutes. Mix in the melted chocolate mixture and fold in the pecans. Pour into the chocolate wafer crust and bake until the filling is just set, about 35 to 40 minutes.


Remove from the oven and let cool. The pie will fall slightly. Once cool refrigerate until well chilled, roughly 1 1/2 hours.


In a medium bowl add the heavy cream, sugar and vanilla extract and beat until soft peaks form. Top the chilled pie with the whipped cream, making a nice mound on top of the pie. Garnish the top with shaved chocolate and finely chopped pecans. Serve immediately.





Tips:

1. This Memphis Mud Pie was well worth it...I did like it without the cookie crust as well...I think the next time I bake this dessert I will make individual pies in my ramekins.
2. I used salted butter since this recipe was loaded with sugar and corn syrup I wanted to balance out the sweet.

Chocolate Molten Lava Cake

Happy Valentines Day


This is week 2 of my chocolate month, this month is all about chocolate and romance. So how about a romantic dessert for 2, or you can eat all by yourself...lol


This dessert is to be shared with someone you love as in a spouse, boyfriend, girlfriend, a child, or a parent.




















I know I got carried away with the pictures however when you cut into the cake and the chocolate spill out and you have a scoop of vanilla ice cream on top....WOW amazing!!!!


P.S. I couldn't find my cute shaped ramekins I had to use the plain ones. (extra large ramekins)

 

ingredients
1 ½ c confectioners sugar
½ c unbleached flour
1 ¼ sticks butter
4 oz semi sweet choc
4 oz dark choc

3 lg eggs
3 lg egg yolks
1 t.vanilla extract
½ t. almond extract - optional


Bake 400 for 12-14 minutes

*butter and sugar ramekins (granulated)

Melt choc and butter in microwave or double boiler.  In a large bowl whisk together flour, confectioners sugar, eggs and yolks, vanilla and almond until creamy. Add melted chocolate (allow to cool) to the flour mixture and whisk together.
Pour into prepared ramekins.



Tips
1. Don't over cook, the center will be creamy
2. You can use the chocolate of your choice
