Banana-less Banana Pudding

Today I made a banana-less banana pudding....Yes I said banana-less, my oldest daughter don't like bananas and I wanted to try this recipe which was given to me by a good friend whom didin't like banana either....It was delicious it still had the banana flavor minus the soggy bananas...lol however my daughter said next time try vanilla pudding to give it a different flavor, you the wheels are turning. I think she want me to take away the banana flavor all together. lol


















Banana-less Banana Pudding
14oz can Sweetened Condensed Milk
14oz Whole Milk (Note: may use sweetened condensed milk can to measure)
Instant Banana Pudding - Small 3.4oz box
8oz Sour Cream
8oz Cool Whip
Nilla Wafers
Prepare dish or pan with one layer of wafers and bananas. Move to the side until pudding is ready to layer.
In separate bowl, combine sweetened condensed milk and whole milk; mix
Next, add ingredients below to milk, one at a time. Stir/mix after every ingredient. Do not add all at the same time.
Add Pudding,  mix
Add Sour Cream ,  mix
Add Cool Whip, mix
Pudding is now ready. Layer pudding over wafers
Cover top layer of pudding with wafers only.
Last, cover dish and put in refrigerator overnight.
**For Best Results– EAT THE NEXT DAY 





Tips
1. allow to refrigerate over night...if possible
2. you may add bananas, it will still be amazing
3. I sprinkled crushed wafers on top

Chocolate Macadamia CheeseCake

Hello, today I decided to bake a cheesecake with a twist. this recipe like most recipes I find I like to tweak them and make them my own, the next time I make this dessert I will leave out the chocolate chips I liked it better when I tasted a piece without the chocolate. However you are welcome to try it the original way.

That vanilla wafer crust was amazingly delicious, I could eat it by itself...which I did...lol


Vanilla Wafer Crust...yummy!




Ready to EAT!!!










Crust:


  • 1 3/4 cup vanilla wafer crumbs
  • 3/4 cup finely chopped, roasted, salted macadamia nuts
  • 1/2 cup firmly packed brown sugar
  • 8 tablespoons (1 stick) butter, melted

Filling:


  • 2 (8-ounce) packages cream cheese, softened
  • 3/4 cup granulated sugar
  • 3 large eggs
  • 3/4 cup sour cream
  • 1/2 cup semisweet chocolate morsels
  • 3/4 cups finely chopped, roasted, salted macadamia nuts

Directions


Preheat the oven to 300 degrees F. Line a 13 by 9-inch baking pan with heavy-duty aluminum foil, letting the edges of the foil extend over the sides of the pan.

For the crust: In a small bowl, combine the wafer crumbs, nuts, brown sugar, and butter. Press evenly into the bottom of the prepared pan. Bake for 8 minutes. Let cool completely on a wire rack.

For the filling: In a large bowl, beat the cream cheese and granulated sugar at medium speed with a mixer until creamy. Add the eggs, 1 at a time, beating well after each addition. Stir in the sour cream. Pour over the crust. Sprinkle with chocolate morsels. Bake until set, 40 minutes. Sprinkle with the nuts. Let cool completely on a wire rack. Cut into bars to serve. Store in the refrigerator.


Tips

1. don’t over bake
2. allow to cool before slicing

Chocolate Chip/Brownie Square

Hello I'm back,

I've been away for awhile about 3 months and I missed baking, My most favorite thing to do, baking makes me happy, when I'm not baking something is going on. I try to bake every weekend. Today I decided to make up for lost time and bake a double dessert...lol yes this dessert consist of Chocolate Chip Cookie dough and Brownies. Please don't hurt yourself!!!

Basic Chocolate Chip Cookie recipe
2 sticks butter (soften)
3/4 c. brown sugar
3/4 c. white sugar
2 eggs
1 t. vanilla extract
2 1/4 c. flour
1 t. salt
1 t. baking soda


mix butter, both sugars mix well, add eggs 1 at a time mix well, add vanilla, add dry ingredients mix well. stir in chocolate chips.


Brownies are from a store bought mix. follow direction on box.


Spread cookie dough on bottom of pan evenly pour brownie mixture over top of cookie dough add pecans or nuts of your choice or no nuts.
Bake 350 20-25 minutes or until done but don't overcook

Pecan Caramel Turtle Cookies


Today I made turtle cookies, my only mistake is that I didn't use my own cookie recipe...lol so if you have a favorite cookie recipe please feel free to substitute it...The cookie taste a little plain my suggestion would be to use a chocolate chip cookie recipe without the chips or even a sugar cookie recipe.


I made a chocolate ganache instead of using the chocolate glaze recommend in the recipe, I just can't follow protocol...lol

Recipe
½ c brown sugar
½ c butter soften
Water
1 t vanilla
1 ½ c unbleached flour
1/8 t salt
2 to 3 c pecan halves
8 vanilla caramels ea. Cut into 4th

Chocolate Glaze
1 c powdered sugar
Water
1 oz unsweetened chocolate, melted
1 t vanilla

**Chocolate Ganache - I used
8 oz chocolate chips  (I used 4 oz dark choc. and 4 oz semi sweet)
1/4 c heavy cream
*melt in microwave save dish, stir and let sit to thicken then drizzle over turtle cookies



Mix sugar, butter, 2 T water and vanilla until fluffy. Stir in flour and salt until dough holds together. (if dough is dry, stir in 1 to 2 t water, as necessary.)
For each cookie: on ungreased cookie sheet arrange 3 to 5 pecan halves to resemble head arms and feet of a turtle. Using a teaspoonful of dough, shape dough around a piece of caramel; press firmly onto center of arrange pecan halves.
Bake 350 12-15 min. or until dough is set but not brown.
Glaze: mix sugar w/1 t water melted choc., and vanilla until smooth. If necessary stir in more water, 1 t at a time until glaze is of desire consistency.
Dip top of cooled cookies into glaze


Tips
1. make sure to push caramel in center of cookie dough and roll into ball then smash.
2. make sure you smash the cookie dough into the pecan so to bake into cookie.

Brownie Pudding

I found this recipe on the food network, and thought It's got to be delicious, well at least it looked delicious...lol I didn't have to tweak it too much just used vanilla extract instead of a vanilla bean which I didn't have...lol I like to use ingredients that I already have. I like to keep it simple...also I did 't use the liqueur, why buy just to use 1 tablespoon















  • 1/2 pound (2 sticks) unsalted butter, plus extra for buttering the dish
  • 4 extra-large eggs, at room temperature
  • 2 cups sugar
  • 3/4 cup good cocoa powder
  • 1/2 cup unbleached all-purpose flour
  • Seeds scraped from 1 vanilla bean
  • 1 tablespoon framboise liqueur, optional
  • Vanilla ice cream, for serving
Preheat the oven to 325 degrees F. bake (exactly 1 hour) Lightly butter a 2-quart (9 by 12 by 2-inch) oval baking dish. Melt the 1/2 pound of butter and set aside to cool.
In the bowl of an electric mixer fitted with the paddle attachment, beat the eggs and sugar on medium-high speed for 5 to 10 minutes, until very thick and light yellow. Meanwhile, sift the cocoa powder and flour together and set aside.


When the egg and sugar mixture is ready, reduce the speed to low and add the vanilla seeds, framboise, if using, and the cocoa powder and flour mixture. Mix only until combined. With mixer still on low, slowly pour in the cooled butter and mix again just until combined.


Pour the brownie mixture into the prepared dish and place it in a larger baking pan. Add enough of the hottest tap water to the pan to come halfway up the side of the dish and bake for exactly 1 hour. A cake tester inserted 2 inches from the side will come out 3/4 clean. The center will appear very under-baked; this dessert is between a brownie and a pudding 


*serve warm with vanilla ice cream

Apple Cake


I found this recipe on the food network however I had to tweak it a little I didn't care for the glaze I used my own and I used pecans instead of walnuts, I also peeled the apples.

I had to slice the cake for the pictures, the recipe said to oil the pan which I should have added flour, so some of the cake stuck to the pan...lol wasn't pretty for pictures, so I sliced first 

























  • 3 cups diced Granny Smith apples, about 3 apples
  • 1 cup lightly toasted chopped walnuts
  • 1 teaspoons vanilla extract
  • 1 teaspoons ground cinnamon
  • 3 cups all purpose unbleached flour 
  • 1 teaspoon baking soda 
  • 1 teaspoon salt
  • 2 cups sugar
  • 1 1/4 cups vegetable oil
  • 3 eggs

*Honey Glaze:
  • 1 cup confectioners' sugar
  • 2 tablespoons honey
  • 2 tablespoons milk

My Glaze
  • 2 T butter melted:
  • 1 c powdered sugar
  • ½ t vanilla
  • 3 T warm milk
*Try the honey glaze you may like it...however if not please feel free to give mine a shot*

*Glaze: Add all the ingredients to a small bowl and stir until smooth. Set the bowl aside.

Cake: Preheat the oven to 325 degrees F. Lightly grease a Bundt pan or tube pan.
In a bowl, mix together the apples, walnuts, vanilla, and cinnamon In a separate bowl, sift together the flour, baking soda, and salt.

Using an electric mixer beat the sugar, oil, and eggs in a large bowl. Add in the dry ingredients and beat until completely combined. Fold in the apple mixture.
Scrape the batter into the prepared pan and bake for 1 hour and 30 minutes or until a tester inserted into the middle of the cake comes out clean.
Allow the cake to fully cool in the pan, about 1 hour, and then turn it out onto a plate.
Drizzle the apple cake with some of the honey glaze, serve and enjoy! 


Tips:
1. The batter will be very thick more like a cookie dough or bread dough
2. Oil and flour your pan 
2. Cake taste delicious next day warmed
