EVERYTHING COOKIES

THE YEAR OF THE COOKIE!!!

Hello Cookie Lovers, today I tried a cookie that I named the Everything Cookie. It is chocked full of everything hence the name. I didn't know how it would taste. But since I'm a cookie lover I figured I would give it a try. I would probably try any cookie as long as there is NO coconut involved...lol



             1 c. butter, softened
           1/2 c. sugar
           1/2 c. brown sugar
            1 tsp. vanilla
              2 c. flour
               1/4 tsp. salt
               1/2 c. mini chocolate chips
    1/2 c mini M&M
              1/2 c. crushed potato chips
    1/2 c pecans
            1/4 c. whole pretzel twists

          Caramel, for drizzling
       Melted chocolate, for drizzling
    Melt about 8 caramel with 1 teaspoon milk or heavy cream
    Melt 1/3 cup of choc chips with 1 teaspoon milk or heavy cream.  In microwave continue to stir about 30 seconds.



Directions
1.     Preheat oven to 350º and line a large baking sheet with parchment. In a large bowl using a hand mixer, beat butter, sugars, and vanilla until fluffy. Add flour and salt and beat until combined, then fold in mini chocolate chips, mini m&m, potato chips, pecans.
2.    Spread cookie mixture onto prepared baking sheet and press in pretzels.
3.    Bake until golden and crispy, about 15 minutes. Let cool completely, then drizzle with caramel and melted chocolate.

4.    Let cool, then cut into pieces and serve.








Tips
     1. Make sure to spread evenly before baking
     2. Don't over bake

Monster Cookie


The Year of the Cookie!!!


Hello Cookie lovers...I found this recipe on the foodnetwork, and thought I have to try this. because I have an everything cookie recipe that is similar with a lot of ingredients such as potato chips, chocolate chips and more.  I will try next month and compare.

I tried making them smaller but the recipe baking time was 20-25 mins which as you may have guest did not turn out well, they over baked. I made them bigger with my XL ice cream scooper and baked them for 15 mins on 350 instead of 375, a much better out come.







2 sticks salted butter
1 ½ c brown sugar
½ c white sugar
2 whole large eggs
1 tablespoon vanilla extract
1 ½ c flour
2 t kosher salt
1 t baking powder
½ t baking soda
1 ½ c oats
1 c M&M's
¾ c chocolate chips
½ c pecans, chopped
2 ¼ c rice cereal

Directions Preheat the oven to 350 degrees F. Cream the butter with both sugars in a mixing bowl until fluffy. Add the eggs one at a time, beating well after each addition. Add the vanilla and beat. Combine the flour, salt, baking powder and baking soda. Add to the mixing bowl and mix until combined. After that, add in the oats, chocolate candies, chocolate chips and pecans in whatever quantity you prefer. Add the cereal at the very end, mixing until just combined. Do not over mix! Use a cookie scoop to scoop balls of dough onto a cookie sheet. Bake until golden brown, about 15 minutes, and then allow to cool on a rack.

Brownie Chocolate Chip Cookie

                      The Year Of The Cookie

I found this recipe on facebook, I've baked the brookies before the brownie/cookie in the muffin tin I've also tried it where you spread the cookie dough in the bottom of your pan then pour brownie batter on top. Both where delicious!!!. This time I wanted to try this recipe because it is actually a cookie since this is The Year of the Cookie.

The recipe called for rolled cookie dough you buy in the grocery store and box brownie mix... I prefer homemade cookie dough which I made from scratch and I bought a brownie mix. The choice is yours. I use an ice cream scoop so my cookies are all the same size.





Recipe
1 roll of chocolate chip cookie dough or homemade
1 box of brownie mix - follow directions on box

Follow brownie mix directions. If you decide to use the rolled cookie dough, scoop and separate and follow these directions.  I scooped a ball of cookie dough and split it half rolled into 2 balls pressed a finger print in one ball and poured a 1/2  teaspoon of brownie mix into the cup, I poured a whole teaspoon then lightly flatten the second ball on top. It gets a little messy. lol Messy is good!

Bake 350 - 12/14 mins check at 10 mins.


Tips

Cranberry Walnut Chocolate Chip Cookies

The YEAR OF THE COOKIE

Since it's Valentine's I decided to bake a cookie with cranberries for the red color. These cookies were so good I had to make them twice.  I had to take them to my taste testers.  My daughter thought there were too many cranberries of course she picked them out...lol I have to agree with her my next batch was made with less cranberries.  However my co-workers/taste tester thought they we're delicious, and had the perfect amount of cranberries.  I will give both recipes below,  the original and my modified version, you be the judge. Recipe.                                                 My version
2 sticks.                                                2 sticks butter
1 c sugar.                                             1 c sugar
1/2 c brown sugar.                            1/2 c brown sugar
2 eggs.                                                  2 eggs
1 t vanilla.                                           1 t vanilla
2 3/4 c flour.                                        2 3/4 c flour
2 t baking soda.                                  1 1/2 t baking soda 
12 oz white chocolate chips.           1/2 t salt optional 
2 c dried cranberries.                       12 oz white or dark chocolate 
2 c walnuts.                                         1 c dried cranberries 
                                                               2 c walnuts or pecans

My modified version I added salt,  I thought the cookies were sweet delicious but sweet.  I also took out 1 cup of cranberries. I'm not a big fan of white chocolate, I thought dark chocolate would go better with cranberries, however they both were absolutely delicious. You can choose for yourself. 


Cream together butter and sugar until fluffy,  add eggs 1 at a time and vanilla, beat well. Add flour,  baking soda,  salt optional,  mix well, stir in chocolate chips, dried cranberries and nuts

350 - 10 mins


Tips
1. Don't over bake
2. Check cookies at 9mins

Hot Cocoa Chocolate Cookies

The Year of the Cookie


It's been awhile since I've blogged. I'm glad to be back!!! I've decided to bake a different cookie each month for 12 months. Hence the year of the cookie.

These cookies are really good, the chips made them gooey inside







Recipe

2 ½ sticks butter                                                                   
2 c sugar                                                                                
2 eggs                                                                                                                                   
2 t. vanilla                                                                            
2 c flour                                                                                                                            
1 c cocoa                                                                               
1 t baking powder                                                               
½ t salt                                                                                    
2 c dark choc chips 12oz pkg                                            

Powdered sugar opt


Beat butter, sugar until light and fluffy and eggs and vanilla, beat well. Stir together flour, cocoa, baking powder and salt, gradually beat into butter mixture. Stir choc chip.

Roll into balls flatten make design w/fork don’t over bake

350 8-9mins

1. Don't over bake
2.Please store leftover cookies in resealable container
