Chocolate Chip Pie w/Pecans

This recipe was a through back to the cookie cake why not make a chocolate chip cookie pie. This is a new recipe I’m trying, not my regular chocolate chip cookie recipe. It turned out nicely...lol although I think I will use my recipe next time.









chocolate ganache drizzle


1 ½ c unbleached flour
½ t salt
½ t baking soda
½ t baking powder
1 sticks butter, softened
¾ c packed light brown sugar
¼ c sugar
2  lg eggs
½ T vanilla
1 ½ c semisweet choc chips
1 c pecans




 Preheat 350 butter - 1 (9 inch) pie plate set aside


In large bowl sift together flour, salt, baking soda, & powder. In mixer cream together butter, brown sugar & sugar. Add eggs 1 at a time, beating well, add vanilla, then add flour mixture mix until fully combined. Add choc chips & nut place dough in pie plates and smooth the tops with hand or spatula.


Bake about 30 -40 mins or until pie is golden and slightly firm to the touch but still soft. If pies begin to darken too much before they are baked through, cover w/foil and continue baking. Let pie cool then drizzle with chocolate ganache

Chocolate ganache
¼ c. chocolate chips
1/8 c heavy cream
1 T corn syrup
melt altogether in microwave stir and drizzle...



Tips

1. I added dark chocolate chips and semi sweet.
2. Chocolate ganache drizzle
3. You can use whipped topping homemade or store bought
4. A scoop of vanilla will go well…

Double Chocolate Muffins

I wanted to make something easy that you can eat on the go, take to work, school or like my daughter she eats them on the train. lol


It's a simple muffin recipe that you can tweak and make your own. For instance you can remove the cocoa powder and it's not double chocolate anymore it's just a chocolate chip muffin...!








I sprinkled powdered sugar



1 1/2 cup unbleached flour
1/2 cup unsweetened cocoa
1 Tbsp. baking powder
1/4 t. salt
1/2 cup firmly packed light brown sugar
2 large eggs
1 cup milk
6 Tbsp melted butter cooled
1 cup semi sweet chips


Preheat oven 375 grease muffin pans with butter or spray if not using paper cupcake pans.


1. Sift together flour, cocoa, baking powder and salt into bowl, add sugar and stir.
2. Lightly beat eggs add to melted butter and milk mix well, make a well in the center of the dry ingredients and pour in the wet ingredients.
3. Stir gently until just combined, do not over mix.
4. Gently add chocolate chips
5. Spoon batter into muffin pan.


Bake for 15-18 minutes or until firm to the touch


 

Tips
1. I added 1/2 each dark chocolate chips and semi sweet.
2. I sprinkled powdered sugar (optional)
2. I always use unbleached all purpose flour....use what you have

Tye Dye St. Pattys Day Cookies

I decided to make something for the kids on St. Patrick’s Day an easy recipe for them to take to a school party or a family gathering.



It's a simple sugar cookie recipe and I used green food coloring, I mixed it in each individual cookie to give it a tye dye look.











 
 
2 sticks butter softened
1 1/8 c sugar
1 lg egg
1 ½ t vanilla
2 ¼ c unbleached flour
1 t baking soda
1 t cream of tartar
½ t salt




Bake 375    9-11 mins.


Cream together butter and sugar, beat in egg and vanilla. Combine flour, baking soda, cream of tartar, salt, add to wet ingredients. Mix well chill for at least 2 hours.




Tips
1. green frosting can be used.
2. green sugar can be sprinkled

Pecan Pie

I decided to make one of my favorite desserts pecan pie, you can’t beat a warm slice of pecan pie with a large scoop of vanilla ice cream….lol This recipe is very easy there is NO way to mess it up.

Actually this is my older daughters genre, she's the pie lady she makes a wicked apple pie as well. yummy, I will be baking it later on this year.





WOW this was delicious!!!!




Pecan Pie


1 cup Karo light corn syrup

3 eggs

1 cup sugar

2 Tbsp butter, melted

1 t. vanilla extract

1 ½ cups pecan

1 unbaked 9” deep dish pie crust

or

1 pillsbury pie crust unfold and place in pie dish


Preheat oven 350
In a bowl combine Karo, eggs, sugar, butter and vanilla mix well, add pecans pour into pie dish. bake 60-70 mins.





Tips
1. I use about 2 cups of pecans, I love pecans.
2. I like to use pillsbury pie crust, I spread a little butter in the pie dish before I place the crust into the dish. for that extra buttery taste.
