Vegan Oatmeal Raisin Cookies w/pecans

This is week 4 (last week) of our healthy desserts…Yayyyy!! My family will be pleased to eat the butter and eggs again. That sounds awful lol.



This week I decided to do a cookie which is pretty tasty and I didn’t get any complaints…lol by adding raisins and nuts gave it the flavor that you miss by not having eggs and butter.


As I said before next month I will be baking all chocolate…for February “Valentines” I know it’s only one day however we want to enjoy the entire month…lol

  ingredients:
1 c vegan butter spread (room temp)
½ c vegan sugar
1 c brown sugar
1 c.apple sauce
1 t vanilla
2 c unbleached flour
½ t salt
1 t baking soda
1 t cinnamon
½ t nutmeg
3 c oatmeal
1 c raisin
1 c pecans/walnuts (optional)


Bake 350 9 - 11 min


Mix butter, sugars, apple sauce, vanilla, in small bowl mix  flour, baking soda, salt, cinnamon, and nutmeg. Add flour mixture to wet ingredients mix well, add uncooked oatmeal, raisins and nuts




 
 
Tips:
If you don't want to take vegan cookies to your Superbowl party here's the regular version.

2 sticks butter - instead of vegan spread,
2 eggs - instead of applesauce,
1 c. white sugar-  instead of 1/2 c. of vegan sugar
take out nutmeg
everything else stays the same....

Lite Yellow cupcakes

This is week 3 of our healthy desserts, lol....These dessert aren't bad at all it just take some getting use to. When you are trying to eat right and are craving something sweet these desserts are perfect. They are vegan, low fat, or lite with low fat or fat free topping. 

This week was easy and you all know I love easy...







ready!!!!




I added a huge dollup of fat free whipped cream








2/3 cup unsweetened applesauce
1 cup sugar
4 egg whites
1 teaspoon vanilla extract
1/2 teaspoon lemon extract
2 1/2 cups whole wheat pastry flour*
2 1/2 teaspoon baking powder
1/2 teaspoon salt
1 1/4 cups fat free vanilla soy milk






*If you don't have pastry flour substitute with 1 1/4 cup all purpose flour and 1 1/4 cup whole wheat flour. **I used unbleached flour and sifted it twice.**

 
Directions


1. In a large bowl, using a fork, mix well the unsweetened applesauce, sugar, egg whites, vanilla extract, and lemon extract.


2.Combine flour, baking powder, and salt; add this to the wet mixture alternately with soy milk, beating well after each addition.


3. Spread evenly into a greased and floured 13X9 sheet pan or two 9 in round baking pans, or cupcake pans.


Bake at 350 degrees for 25-30 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pans to wire racks to cool completely.




Glaze (optional)

In a small sauce pan on low heat combine 1/2 cup confectioners sugar, 1/2 tsp vanilla extract or lemon extract, tsp milk and continually stir until sugar is dissolved completely. Use teaspoon to drizzle on top of cake.


Tips

1. I used unbleached flour and sifted it twice to make if fine.
2. Skim or 1% milk can be substituted
3. I didn't use the glaze instead I used fat free whipped topping.

Angel Food Cake

This is week 2 of our healthy eating desserts (wink wink). Let’s hope all that are trying to eat lighter for the New Year are sticking to the plan.



I must warn you next month I will be baking all chocolate…for February “Valentines” I know it’s only one day however we want to enjoy the entire month…lol




This wasn’t as easy as last week vegan low fat chocolate applesauce cake, however it was delicious. I added pineapple chunks, you can add your favorite fruit and fat free whipped topping.

1 3/4 cups sugar 

• 1/4 teaspoon salt
• 1 cup cake flour, sifted or unbleached flour
• 12 egg whites (room temperature)
• 1/3 cup warm water
• 1 teaspoon lemon extract, or extract of your choice
• 1 1/2 teaspoons cream of tartar


Directions


Preheat oven to 350 degrees F.


Sift sugar 2 to 3 time until it is superfine or if you have a food processor spin sugar for about 2 minutes until superfine. Sift half of the sugar with the salt the cake flour, setting the remaining sugar aside.


In a large bowl, use an electric mixer thoroughly combine egg whites, water, lemon extract, and cream of tartar, increase the speed to medium-low and beat until the whites are foamy. Increase the speed to medium-high and slowly sift the reserved sugar, beating continuously until whites are nearly stiff, yet is not dry. sift enough of the flour mixture in to dust the top of the foam. Using a spatula fold in gently. Continue until all of the flour mixture is incorporated.


Carefully spoon mixture into an ungreased tube pan. Bake for 35 minutes before checking for doneness with a wooden tooth pick


Cool upside down on cooling rack for at least an hour before removing from pan.




 
Tips
1.Use an ungreased tube pan
2.You may use parchment paper in the bottom of your pan if it’s not non-stick

Vegan Low Fat Chocolate Applesauce Cake

It's a New Year and most of us like to start the year off eating lite, for the month of January I will bake vegan, lite and low fat desserts....


I was impressed with the way this cake turned out it was very good for it not to have butter and eggs...lol I really enjoyed the fat free topping.


This was a very easy one mixing bowl recipe.





I sprinkled with confectioners sugar





add a scoop of fat free whipped topping...delicious!!






Recipe


2 cups unbleached flour
1 cup sugar
1 tablespoon cornstarch
2 teaspoons baking soda
1/4 teaspoon salt
1/3 cup cocoa powder, unsweetened
1 1/2 cups applesauce, unsweetened


Directions


Pre-heat oven 325.


Grease and flour, or non-stick spray a bundt or square pan.
Mix all of the dry ingredients in a large bowl.
Add applesauce and mix well until batter is smooth.


Bake for 40-50 minutes or until done. (Insert toothpick in center of cake; if comes out clean, cake is done.)




Tips
1. If you want the cake to be all vegan you may want to omit the confectioners sugar and fat free topping...

Monkey Bread

Happy New Year!!! 

Welcome back it’s a new year with new desserts. I know we’ve all eaten more than we should have…lol well at least I did. I plan to bake a few light desserts for the month of January since most people like to start the year off eating right, however this first dessert was still a part of the holidays…lol I made a delicious brunch New Years Day, and baked a simple easy dessert…Monkey Bread.



Recipe
1/2 cup sugar
2 teaspoon cinnamon
2 cans (16.3 oz each) Pillsbury® Grands!® Homestyle refrigerated buttermilk biscuits or 4 cans of regular size
1/2 cup chopped pecans
3/4 cup butter or margarine, melted


1. Preheat oven to 350 degrees F and grease a 9-10 inch tube pan.


2. Mix white sugar and cinnamon in a large sized plastic bag. Cut the biscuits into halves or quarters and place biscuit pieces in the sugar cinnamon mix. Shake well.


3. Arrange pieces in the bottom of the greased pan. Sprinkle pecans, continue layering until all the biscuit pieces are coated and in the pan, and all the pecans.


4. In a small saucepan, melt the butter in a microwave safe bowl. Pour over the layered biscuits.


5. Bake for 30 minutes. Let bread cool in pan for 10 minutes, then turn out onto a plate. Pull apart and enjoy!





I cut my pieces in halves and added remaining cinnamon/sugar




Done time to turn over and eat!!!!





Finish product ready to pull a part and eat...yummy!!!





This is my tweaked version lol I added my famous glaze and extra pecans



Tips

1.Sprinkle the remaining cinnamon sugar over the bread before baking.
2. I also made a glaze which was awesome, the recipe didn’t ask for a glaze however I’m always looking to tweak my recipes.
